Pistachio - Not Your Ordinary Nut

Guess what today is?  Aside from being the day Napoleon escaped from Elba and the day of the first successful color motion picture show in London, February 26 represents National Pistachio Day!  Are you green with delight?

 

Pistachios are one of my favorite nuts-- you wanna know why?  Because two handfuls equals close to 600mg of potassium.  Why is this significant?  Most people know bananas as a food containing a high potassium level.  Nuts!  But bananas also have a high sugar content making them difficult for those who suffer from diabetes or low blood sugar levels.  As a compromise this little green nut helps meet your potassium needs without a heavy dose of sugar, very effective for those struggling with high blood pressure who need to increase their potassium intake to help lower their high blood pressure naturally.  Sorry banana - hope you aren't green with envy.

 

Green Tea Pistachio Muffins

 

1 cup whole wheat flour

1/2 cup pastry flour

1/2 cup ground pistachios

1 tsp baking soda

1/4 tsp sea salt

1 tsp powdered green tea

1/2 cup honey

1/2 cup organic butter melted

1/2 cup organic coconut oil melted

3 organic eggs

1 cup organic plain yogurt

1 1/2 tsp vanilla extract

 

Pre heat oven to 350 degrees F.  Line muffin pan with paper linings.  Mix flours, pistachios, baking soda, green tea together; set aside.

In a large bowl beat until smooth honey, butter, oil, and eggs.  Stir in vanilla.  Beat in flour mixture alternatively with yogurt.  Pour batter into lined muffin pan.

Bake 20 - 30 minutes.  Cool and serve.

Gee Catherine perhaps you could explain & list the "realistic" plans in the Dem budgetRead More that were excluded from the Repub budget. Would also be interested to know why having children in Radnor Schools is a good thing....I'd rather have representatives who have pertinent experience and perhaps have grown children who have already been through Radnor....do senior executives or Board members of corporations have children in their company's? What is the benefit to the school children or the Township?
