Capri is More Than Just Water Ice

All made from scratch, with flavors like South Sea Punch and Birthday Cake, Capri has made a name for itself.

It was a very hot day recently in Wayne, and before Capri Water Ice’s opening time owner Harry David had already served five customers.

No credit card charges. It’s just cold, hard cash for water ice, soft serve and an ice cream/water ice mix known as gelati or “radio balls” at Capri, 238 East Lancaster Avenue.

For Davis, who bought the business in 2006, his water ice is made from scratch from supplies from a base from Philadelphia Water Ice Company to Costco to gourmet lemon zest from California.

“It all depends on what makes it taste best,” he said. “We just want everything to taste the best.”

It takes a lot of different fruit to make the South Seas Punch flavor, for example. The Frappa water ice has at least six ingredients in it.

Temperature and texture also plays a big part in how Davis designs his products.

“It’s all about consistency,” Davis said. “A Cheeto wouldn’t taste right if it wasn’t crunchy.”

Capri stays open from the first day of spring to around the last day of summer. It’s cash only, but don’t stress too much if you’re short. “Just catch me later,” he said to a customer that sweltering day.
