Cinnamon Chip Snickerdoodle Cookie Bars
I'm sure you know how this goes…"Mom, I need to bring a _______ to _______ tomorrow! Can we make something?"
Whenever this happens, I always think first to make brownies or bar cookies. They are easy to mix together, spread in the pan, bake and cut.
So I asked my daughter Sam what kind of bar cookie we should make. She suggested a snickerdoodle bar cookie! Hmm, I'd never thought of making snickerdoodles in bar form. Sounds like a delicious idea!
We found my Mom's old Snickerdoodle recipe and adjusted the amounts to fit a half-sheet rimmed baking sheet pan. To amplify the cinnamon flavor, we decided to add cinnamon chips. We sprinkled the dough with cinnamon sugar before they were baked to mimic how snicker doodle cookies are rolled in cinnamon sugar. They puffed up, coming precariously close to the edge of the pan, before they flattened out. We let them cool, then cut them into 48 squares. My tasting panel, Sam, her friend Grace and my other daughter Lauren, gave them a unanimous two thumbs up! We hope you will love them too!
